Here's another Christian album that I've been listening to lately. I didn't have a great impression of this album to begin with, but I just don't think I liked the slow song "Fall Afresh" on the first track. The second track "Furious" is much more exciting to listen to!

I actually really enjoyed this movie...it was clean enough for the whole family to watch together. And, it was a good way to bring up the topic of adoption and telling the truth to your children too.

So, a while back I was asked to review this CD, and I've been listening to it ever since it came in the mail. It's catchy and upbeat, youthful, and yet full of worshipful lyrics. Several of the songs make me want to get up and dance with my kiddos.

For Robert, I’m All In is more than the name of his third studio album, due July 26 (yes, that's today!). It has become Robert’s life motto as he responds to God’s calling to live fully committed to Him. In addition to writing and recording I’m All In and playing on a summer tour, Robert also leads regular Sunday morning worship at his 800-member Orlando, FL church. And he’s done it all as a high school senior. That's awesome!!!

Creating I’m All In was a powerfully personal experience for Robert, who teamed with veteran songwriter Jason Ingram (Tenth Avenue North, Sanctus Real, Bebo Norman) and legendary producer Matt Bronleewe (Jars of Clay, Michael W. Smith, Steven Curtis Chapman) on the album.

Sorry it's been a while since I posted. Between the move and summer, it's just something I've neglected. But, be watching our blog for further posts...I've been asked to review a CD and possibly a few more things in the future. Benjamin's First Haircut

Which means that Benjamin gets to move from the carrier to Gabrielle's old car seat. There was a little crack in the styrofoam a few months ago (from carelessly taking it in and out of the car), and I'm glad I just called Graco and they sent a new one for only $10...awesome! Just goes to prove that it's always worth it to take a chance. You never know until you ask! :)

And, of course, we had to get some crazy face-pictures!

This was pretty much the look on Benjamin's face for the whole afternoon/evening. I'm just glad that he was content to watch and not want to be on the rides too...next year!

I was jealous because Gabrielle picked Nick to go on the ferris wheel with her for her first time. I got to head home with Benjamin because the wait line was about 30 minutes before they even got on the ride. At least they brought home some cotton candy! :)

Last Friday we headed to Chick Fil-A for "Mommy & Me" time. Gabrielle and some of her friends were there creating paper-sack-lion-puppets. While they were on the floor doing that, I let Benjamin check out the slide for the first time.

It's been fun watching our kiddos play together more lately. Of course, a lot of their interactions have ended in wrestling with each other...cute!

Galveston day-trip

We had a great time when my parents came for a visit in February. We decided it would be fun to take a day-trip to Galveston, and had originally planned to go to Moody Gardens while we were there, but it took a lot longer to get there than we had figured. So, we ate lunch and just played on the beach...we still had lots of fun!

Getting a ride on the ferry across Galveston Bay...first time on a ferry for everyone but me. Great experience!

Gabrielle was a little nervous about our car being on a "boat", so she initially wanted to stay in the car in her carseat.

Eventually she got out and enjoyed the foggy view.

This lady was cracking me up...I wonder if she stands up through her moon roof often because she did it several times in the short time we were behind them.

Finally a clear view of part of the shore.

For lunch we headed to Gaido's (per recommendation from Jeremy Davis). We enjoyed some delicious seafood. And, my parents got to try some new things (not much fresh seafood in Nebraska!).

I don't know what we were laughing about, but I love this picture because it shows how much fun we were having. AND, this is one of the most delicious foods I've ever eaten...their Lobster Bisque. Awesome!!!

I was SO proud of her for writing her whole name 25 times for her friends at school and MOPS. Some of them she even did all by herself while I was rocking Benjamin for his nap. Could you ask any better from a 3-year old? :)

A few January favorites

So, I'm back (for the two of you who have missed our posts)!

Just wanted to share a few of our highlights from January.

We broke the trip back to Texas into two days, stopping in Denton for the night. Here's the kids' reaction when we got out of the car and into the hotel.

Waking up the next morning...one of my favorite things when Gabrielle is sweet with her little brother. And this was most possibly Benjamin's messiest "morning hair" ever!

The Barbie house that we gave Gabrielle for Christmas. She's so excited, and so am I...mostly because it's something she can go play with by herself for a while...especially while I have stuff to do for/with Benjamin.

We went to the park, met some friends there to play, and then ate a picnic lunch...it was beautiful!

Easy Enchiladas

Ingredients

1 jars prepared salsa (opt.)
1 pound ground beef
1 (15.5 ounce) jar prepared salsa con queso
10 (8 inch) flour tortillas
1 (8 ounce) package shredded Cheddar-Monterey Jack cheese blend

Directions

Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish, and pour the salsa into the bottom of the dish (Nick liked it better when I left this out). Set aside.
Cook and stir the ground beef in a skillet over medium heat for about 10 minutes, until meat is browned and crumbly. Drain the grease from the beef, and add the salsa con queso to the skillet, stirring to mix well. Place about 2 tablespoons of the beef mixture down the center of each tortilla, roll the tortillas, and place them seam side down on top of the salsa in the baking dish. Sprinkle the shredded cheese on top of the enchiladas. (I only filled as many as we were going to eat for one meal, and saved the second half of the mixture for the next meal...they tasted much fresher the second time around this way!).
Bake for 15 to 20 minutes in the preheated oven, until the cheese is browned and the enchiladas are hot and bubbling.

Every time we mop the floors (which isn't all that often since we don't have house pets or anything messy) Gabrielle BEGS to help mop the floors. I think I need to hire her out to some of my friends who don't like housework! :)

We've met some wonderful friends while we've been living here in Texas. We enjoy hanging out with is the Snodgrass Family, and they've helped us out in the past. While Lauren was in England for her brother's graduation, we had Marc and their two boys over for a meal and play time.

Chocolate Zucchini Cake

***When I made this, I doubled the recipe so that I used the whole box of cake mix, and baked it in two pans (one in the freezer for later).

1 3/4	cups Betty Crocker® SuperMoist® German chocolate cake mix (from 18.25-oz box)
1	cup shredded unpeeled zucchini (about 1 medium)
1/2	teaspoon ground cinnamon
1/8	teaspoon ground cloves
1/4	cup buttermilk
2	tablespoons vegetable oil
1	egg
1/4	cup chopped nuts
1/4	cup miniature semisweet chocolate chips

1. Heat oven to 350°F for shiny metal or glass pan (or 325°F for dark or nonstick pan). Spray bottom and side of 9- or 8-inch round cake pan with baking spray with flour.

2. In large bowl, beat cake mix, zucchini, cinnamon, cloves, buttermilk, oil and egg with electric mixer on low speed until moistened. Beat on medium speed 2 minutes, scraping bowl occasionally. Pour into pan. Sprinkle evenly with nuts and chocolate chips.

3. Bake 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.

Kitchen Tips

Out of buttermilk? Use 3/4 teaspoon lemon juice or vinegar plus milk to make 1/4 cup. Let stand for about 5 minutes before using.

Macaroni Grill’s Pene Rustica

So, Nick's been asking me to try to make one of his favorite entrees from Macaroni Grill. And, I must say, it was delicious...my first time cooking with shallots. And, I got to use my Pampered Chef chopper for the first time...I don't know how I cooked without it before--love, love, love it!!!

Gratinata Sauce:

2 T. butter
2 T. chopped garlic
1 tsp. chopped rosemary
1 cup marsala wine
1 tsp. Dijon mustard
1 tsp. salt
¼ tsp. cayenne pepper
8 cups heavy cream

Saute butter, garlic, and rosemary until garlic begins to brown. Add marsala wine and reduce by one−third. Add remaining ingredients and reduce by half of original volume. Set aside.

Penne Rustica:

1 oz. pancetta or bacon, chopped
6 oz. butter
1 tsp. chopped shallots

18 shrimp peeled and devained
12 oz. grilled chicken breast, sliced
1 pinch of salt and pepper
4.5 cups of granita sauce
1 cups parmesan cheese
48 oz. Penne pasta, precooked
3 tsp. pimentos
1/2 tsp. paprika
6 sprigs of fresh rosemary

Saute pancette until begins to brown. Add butter, shallots, and shrimp. Cook until shrimp are evenly pink but still translucent. Add chicken, salt, pepper, and mix thoroughly. Add granita sauce and 1/2 cup of parmesan cheese and simmer until sauce thickens. In a large bowl, combine shrimp and chicken mixture with precooked pasta. Place this mixture into single serving dishes or one large casserole dish. Top with remaining cheese and pimentos and sprinkle with paprika. Bake at 475 for 10−15 minutes. Remove and garnish with fresh rosemary sprig. Serves six.

Okay, so this wasn't from Monday, but I just had to include a picture from our time swimming at a friends' house (one of the only benefits of living so far south is that you can swim later in the year...since it's SO hot). Thanks for having us over to your house!!!

In our front living room we created a "tent" out of the couch, cushions, a card table, and some blankets. Gabrielle told me that it was "AWESOME!"

We finally had our first MOPS meeting of the year (I'll take pictures of our new room and beautiful decorations next time). We had a great turn out...the most moms we've ever had from what I've heard. I'm excited for this year--to see friends that I met last year, and get to know some new moms too!

Afterwards we usually head to Chick Fil-A. This is a picture of one of my new mommy friends, Amy with her little guy, Miles (who was born on the same day, in the same hospital, even with the same OB as Benjamin--seriously!). Cute kisses!!!

The four girls who were at lunch that day with their ice creams...all of them are adorable. I'm SO glad I enjoy hanging out with their moms so Gabrielle can have friends too. What a blessing!!!

Gabrielle and her friend, Kaylee, built a doggie-leash holder at Lowe's on Saturday morning. Obviously we don't have a dog, so I think we'll give it to Grandma Debbie for "Jazzy". She just loves to use the hammer and the nails to build her "project"!

We switched Mother's Day Out programs this year to a Lutheran church that is literally two blocks from our house. I am SO excited about her teacher, Ms. Amy (who incidentally even has her Master's Degree from Duke--impressive).

We stayed at the same dance studio this year, Keely Jardell's, but are now officially in the "Baby Ballet" class on Wednesdays. I am just pumped that I don't have to pay monthly for her classes again this year, just the one time fee that I already pre-paid last spring!

One of my good friends in Wichita, Kim, just had a baby boy in June. She hadn't gone back to work yet, so we were able to go visit them one of the days we were in Kansas. Here are a few of the pictures from our time in Wichita. Nick had to work during the day on Tuesday, Wednesday, and Thursday at the Koch building. So, the kids and I enjoyed hanging out with friends and getting in some shopping at the Super Target next door to our hotel--awesome!!! :)

Trip to Nebraska

At the end of August, we made the trip to Nebraska (partially take my mom back, partially to celebrate my grandma's 85th birthday). Here are a few of the pictures we took in the

After my gallbladder surgery (which went well), my mom flew down to help out while I was recovering. She had a great time with the kiddos, and even cleaned the house for us (bathtub and shower included!).

Rotten gallbladder

So, most of you who read our blog (or follow me on facebook) probably already know that I have been having problems with my gallbladder lately. But, I thought I would put it out there just in case you didn't know yet. I know...it's a whole post without pictures of my kiddos...who knew I could just type some words out?! Okay, so I digress (at 2:22 in the morning).

Anyway...you guessed it from the time, I am up having one last attack. This gallbladder evidently didn't just want to go out quietly, and had to throw one more middle-of-the-night "party" inside me. I did have a few blog posts to catch up on, so I at least feel like I used my time "wisely" while I've been awake tonight.

Okay...I really need to stick to the point. Today I go to Beaumont for surgery with Dr. Peel. I feel like I'm in great hands, partially because this surgeon is booked (he MUST be good, right?). But, also because he's worked at John Hopkin's as well as Mayo. Now those are some wicked-awesome places to have worked if you are in the medical field, right?!

I thank all of you in advance who have been praying for me. I really feel at ease, and I know it's because of all the prayers lifted up for me and my family. I have a new babysitter (Whitney) coming around noon, check into the hospital at 1pm, and will be in surgery by 3pm. From what I have read, it appears that they will monitor me afterwards for about two hours and make sure that I can keep down some fluids, and then they'll release me to go home. Sounds pretty easy, right?

Lastly, I would appreciate prayers for safe travels on Saturday for my mom who is driving from Nebraska, flying out of Wichita, and getting picked up by Nick in Houston. I'm excited to have her here, especially since I don't know exactly what to expect post-surgery. And, I'm not supposed to pick up anything heavier than 10 pounds for 3 weeks!!! Really, can't I just fudge a little? Benjamin's only 14 pounds!!!

Okay...well enough rambling from me. I think I really could get used to the idea of blogging without pictures from time to time! What do you think?

Creamy Pasta Primavera

INGREDIENTS:

4 cups penne pasta, uncooked

2 T low-fat zesty Italian dressing

1 lb. boneless skinless chicken breasts, shredded

2 zucchini, peeled and cut into chunks

1 1/2 cups cut fresh asparagus (1 inchpieces)

½ cup pepper (red, yellow, or red), chopped

1 cup 25%-less-sodium chicken broth

8 oz. light cream cheese spread

1/4 cup light Parmesan grated cheese

DIRECTIONS:

1.	Cook pasta as directed on package.
2.	Meanwhile, heat dressing in large skillet on medium heat. Add chicken and vegetables; cook 10 to 12 min. or until chicken is cooked through, stirring frequently. Add broth and cream cheese spread; cook 2 min. or until cream cheese is melted, stirring constantly. Add Parmesan cheese; mix well.
3.	Drain pasta; return to pot. Add chicken and vegetable mixture; toss lightly. Cook 1 min. or until heated through. (Sauce will thicken upon standing.)

My CVS purchases this week. I only spent $10.82 (originally worth $99.65) and even got $5 in Register Rewards to spend next time!!! I went in to buy the diapers and floss, and just happen to find some great deals on toys and books while I was there.

And, my Target purchases for the week. I only spent $13.93 when I would have paid $58.70 for the full price! Can I just say how much I love, love, love couponing, saving our family money, and getting what I would have bought anyway (especially at Target)?!!!

Another Lowe's project

I was enjoying a ladies-retreat weekend with some friends the other weekend (for about 24 hours), and was SO proud that Nick ventured out of the house with both kiddos. Friday night they went to McDonald's while Saturday they made the project at Lowe's as well as Dora's 10th Birthday party at Walmart.

Trying new things

So, our pediatrician encouraged us to start feeding Benjamin food (even though I wasn't ready...he's still a baby, right?) So, I looked back on when we started Gabrielle, and it was about the same time that we tried cereal a few times, but didn't seriously start spoon-feeding her until after she was 6 months old.

Making the spoon "zoom" to his mouth, which he thought was pretty funny (he smiled, so that gave me an easy "in"!).

Children's Museum

One of Nick's days off we headed to Lake Charles, Louisiana (about an hour away) to check out the Children's Museum (a smaller version of Exploration Place for those of you in Wichita).

We got there at 10am--just as a bus-load of kids from a day care got there too...which made Gabrielle act a little "shy". So, I was thankful that the museum is three stories tall, and we headed to a not-quite-so-busy area upstairs.

One morning this week I was getting dressed, and the kiddos were laying on the bed. Benjamin started getting a little grumpy, so I laid him on his tummy (sometimes helps get out a burp that is stuck way down in there).

Then I saw a "Kodak moment", and am so glad I ran to get the camera before I missed their cute smiles to each other.

Not bad for a lefty

Here's a few of the "crafts" that we've been doing lately.

Using some of the adhesive foam pieces that Grandma Reinke gave us at Christmas. Notice that Gabrielle was pretty persistent to match the shirts and bottoms in the same colors...I tried to mix it up, but that didn't go over with her.

More foam pieces...this time we used Elmer's glue (and didn't even make that big of a mess!).

I finally got brave enough to let Gabrielle use the finger paints that Grandma Reinke gave her for Christmas. I've had it in the closet, and been able to "avoid" getting it out whenever she asks. But, it's been SO hot here, and every time we go outside for a few minutes we get bit up. So, I've been coming up with fun things inside.

Funny faces and a camera were great entertainment while I was waiting to meet the doctor.

We put all these little foam alphabet and number pieces together in order one morning, and then we noticed Gabrielle was taller and Benjamin was shorter.

We went to the Port Neches Library one day in July and Gabrielle ended up winning a bucket of prizes with a ticket to Schlitterbahn.

One of the evenings in Nebraska, we did some fireworks before bedtime. I was disappointed in the "Snap-Pops" that you throw on the ground. They were one of my favorites when I was growing up, and unfortunately, the ones we had purchased didn't work very well...they wouldn't even stomp out.

Daddy tried lighting too many things at one time, and got a little freaked out when he didn't quite get out of the way in time.

Gabrielle got just a little scared at some of the louder ones, while Grandpa is obviously enjoying the show.

Another night while we were in Nebraska we stayed up even later and did the "bigger" fireworks on the front driveway. Gabrielle enjoyed staying up past her bedtime, as well as watching them light up in the dark sky.

Fun in Nebraska

So, after our time in Kansas, we headed up to my parents' house in Nebraska for some time on the dairy farm. Unfortunately, I had a gallbladder attack the same day Nick had the flu (Saturday), so that wasn't very fun. I'm just glad that we had my mom there for "back-up" to help with the kiddos while we didn't feel well!

And, yes, Gabrielle swinging with Nick. She was out on the swing a LOT, and obviously everyone got their turn to push her. And, Nick even got the honor of wearing her pink hat for a while too!

On Saturday (when I wasn't feeling that great), it was the perfect weather for flying kites. Gabrielle really liked to hold it by herself.

While we were in Wichita, Gabrielle had her first trip to our family dentist, Dr. Woodruff. And, might I add, she did a fantastic job! She was a little hesitant at first, but we had been reading "Dora Goes to the Dentist" all week in preparation, so we reminded her that everything would be alright!

My hygienist, Diane, did a wonderful job counting her teeth, and then also cleaning them. Gabrielle had a little plaque that Diane gently scraped off a couple of her front teeth.

Benjamin's Baptism

On Sunday, July 4th we had Benjamin baptized at Eastminster Presbyterian Church in Wichita. It was wonderful to be back "home" again, and see lots of friends and family too.

While we were in Wichita, my parents and sisters' families came down and we got to hang out at their hotel pool one evening. We had a great time, especially since it was raining for most of our time in Kansas, so we weren't able to go to any outdoor pools.

We packed up the mini-van and headed up to Kansas (yes, again) for the weekend of the 4th of July.

And, now we've got a happy girl!

By the way, if you've never seen these books before, they are GREAT! They come with a little paintbrush-pen that you fill with water and are called "Water Wow Books". When the water is applied to the page the color/picture shows up. When it dries the color/picture disappears and the fun starts all over again. We have the Elmo, Princess, and Dora books, but there are other ones out there. I bought the first one at Walgreens, but found the other ones on Half.com!

One morning (obviously before I had finished Gabrielle's hair) I laid Benjamin on the floor so I could do something, and Gabrielle decided she was going to "read" him a book.

Unbelievable that I didn't kill it, I know! But, we've had two tomatoes now, and they've been pretty tasty too!!!

Yep...our first (but probably not our last) accident involving lots of blood. We met some friends at the Bounce Zone (a bunch of indoor inflatables), and Gabrielle apparently got too brave when she jumped off something...I didn't even see it happen.

I don't think she had ever cried that hard before, but at first there wasn't any blood, so I had no idea what was wrong. I was just glad that Benjamin was sleeping so I could quickly lay him in his car seat while we rushed to the bathroom.

I made her smile a little so the picture didn't look quite so bad.

Benjamin keeps growing

Gabrielle is one of the best BIG sisters ever, in my humble opinion. She likes to give him a "morning hug and kiss" every day, and "plays" with him to get him to smile and even giggle a bit (according to her, she gets the most smiles!).

Swimming lessons!!!

Gabrielle took swimming lessons at the end of June with her friend, Emmalyn. Her teacher, Mrs. Maria and her husband (sometimes their teenage daughter too) did a great job with the kiddos in their backyard pool. I was impressed and would definitely take her back to them again next year!

The last day of swim lessons was "parent show-n-tell". So we got to see what she had learned over the past 7 days. Of course it was raining...luckily there was a little porch that all the parents were huddled under with all their cameras! :)

Nick and I took Gabrielle to her first movie in the theaters...Toy Story 3. She did a very good job, and only asked to go home once when it was a little scary in the middle.
