So I was surprised to find out that Nick likes asparagus better even than peas, so here's a recipe that he just raved over from last night.
Smoked Chicken and Asparagus with Penne
1 lb. boneless chicken breasts
2 T. olive oil
½ tsp. liquid smoke
2 tsp. water
1 garlic clove (I used dried minced garlic)
4 oz. uncooked penne pasta
1 pkg. frozen asparagus spears, cut up
1/2 cup chopped roasted red bell peppers (I didn't use these)
1 cup (8 oz.) heavy cream
½ cup (2 oz.) shredded Romano cheese
¼ cup (1 oz.) crumbled Feta cheese
Salt and pepper to taste
Cook chicken in oven for about an hour, or until no longer pink. Cut chicken into strips, place in skillet with oil/smoke/water/garlic mixture, and brown for 8 minutes. Stir in asparagus and cook for 5 minutes. Add cream and cook for 10 minutes or until cream reduces slightly.
Meanwhile, cook penne as directed on package and drain.
Add cooked penne, Romano cheese, salt, and pepper to chicken mixture and toss. Sprinkle with Feta cheese and enjoy!
